Cultures for Yogurt
Why are yogurt starter cultures needed?
A traditional yogurt starter is a carefully balanced blend of bacteria that encourages the fermentation of lactose in animal milk. Yogurt, put simply, is the beneficial bacteria fermenting the milk into an acidic food, which not only can remain edible for longer, but also can help your gut health. Usually, a yogurt starter will contain a range of live yogurt cultures - good bacteria strains like Lactobacillus bulgaricus and Streptococcus thermophilus . They ferment lactose which is milk sugar to produce lactic acid. As this lactic acid becomes prevalent, the acidity decreases and results in the milk clotting. This coagulation contributes the soft gel mouth feel of a yogurt's creamy texture.A wide range of yogurt cultures
